Hope you all had a wonderful weekend and are having a great Monday so far! We certainly had a very enjoyable weekend together, working on Easter crafts and such. Saturday especially was a slow day spent at home working on crafts, reading, and playing in the back yard.
We started Saturday off right too with a special Easter breakfast… bunny cinnamon rolls! It’s an Easter tradition around here! We just used the Immaculate Baking Organic Cinnamon Rolls from the refrigerated section to make the face and ears. Then, we used organic chocolate chips for the eyes and nose and slivered almonds for the adorable bunny teeth.
It’s so easy! Plus, the boys get to help make them. Then, they gobble them right up fresh from the oven!
After breakfast, having been inspired by a Pinterest photo, the boys decided to make their own bunny masks. I helped our toddler a bit with his. All you need to make your own is some pompons, pipe cleaners, a popsicle stick, and Elmer’s Glue. We simply wrapped the white pipe cleaners around the stick to make the whiskers and then used Elmer’s Glue to glue on the pompons, pink for the nose and white for under. Crafting doesn’t get much easier than that, my friends! The boys were proud of their handy work and I thought they turned out super cute!
Our extremely mature 8 year old indulged me by taking a photo with his mask and approved it being shared on mama’s blog, lol. He’s such a sweetie!
We also started our Easter countdown calendar this weekend, much to the boy’s excitment! Their sweet little faces light up every year when I pull it out of the box to hang. We do a little something different each year, much as with our Advent calendar. I often include Easter activity suggestions when things are less hectic. But when we’ve had a young baby or a lot on our plate, I make it super simple by just sticking in some pencils, erasers, or other needed stationary. I try my best to avoid sweets because I know they’ll be getting enough of that from the Easter bunny!
My favorite part of the day was getting in the kitchen with the boys to make some no bake carrot cake balls! I mention in my last post that I always associate Easter with carrot cake and have been scouring the internet for some healthy cake cake inspired recipes. Inspired by what we found, we rolled up our sleeves and got to work. I adapted this recipe according to what we had on hand and I also added some unsweetened shredded coconut! Because… we love coconut!
If you’d like to make your own no bake carrot cake balls like ours, here’s what you’ll need:
No Bake Carrot Cake Balls:
-1 cup rolled oats
-1/4 cup unsweetened shredded coconut
-1/4 cup raisins
-1/3 cup shredded carrots
-1/3 cup almond butter
-1/4 cup maple syrup
-1/4 cup chopped nuts (We used a mix of pecans and almonds.)
-1/2 tsp cinnamon
-a pinch of nutmeg
-a dash of sea salt
First, add the dry ingredients to a mixing bowl: the oats, shredded coconut, raisins, chopped nuts, cinnamon, nutmeg, and sea salt. Stir gently until evenly mixed.
Then, add the wet ingredients: the carrots, almond butter, and maple syrup. Mix gently with a wooden spoon until the dry ingredients are coated.
Place the mixture in the refrigerator for an hour.
Finally, gather your loved ones around the kitchen counter and prepare for some messy fun! Use a small cookie dough scoop for evenness and roll into balls.
And now for the best part-ENJOY! Keep any leftovers in the fridge or freeze for later, if there are any left that is! Which there probably won’t be!
