Hope you all had a great weekend! We sure had a wonderful one! My husband works most Saturdays so I mostly spent the day getting caught up on laundry while listening to my favorite podcasts, catching up on the other usuals, and doing some end of the month/start of a new month work. Tasks such as schedule/calendar maintenance, meal planning (my greatest struggle), and list making.
I got to do the fun stuff too, like record the books I read this month in my book journal and pick out new books for this month. And I got to work on planning a month of activities (including Easter crafts and festivities-YAY!). I also got to announce the winner of the first contest I’ve had here on the blog: the super sweet Ashley Patrick! Hope you enjoy the Easter tree, Ashley!
On Saturday evening, we tried a new restaurant in town that I’m soooo excited about! It’s called Tacos 4 Life. Not only is the food AMAZING, but for each meal you purchase one meal is provided to a hungry child! After much deliberation, I decided on the Classic Southwest Taco salad bowl, with ‘magic tofu’! It was topped with black beans, roasted corn, fresh avocado, and pico de gallo. I ate way too much because it was Tasty, with a capital T! You really must check this place out! Eating delicious food for a good cause=win+win! I hope to be back very soon!
We also tried ordering our groceries from Kroger online with ClickList for the first time this weekend and I am SOLD! How I’ve survived up until this point I’m honestly not sure, probably because of the help from my sweet husband who isn’t at all phased by three wild boys in a grocery store… But I just feel like my life got about 10 times easier! It’s just click, click, click on your computer and then you pull up to the grocery store and they load your groceries. And this one little thing seemed to make our whole weekend slower and more relaxing. It may not be possible in your area, but if you have the ability, I highly recommend trying this lovely service! (It reminds me of the way they used to pump your gas for you back in the old days.) Hopefully, we will be on a first name basis with the gracious Kroger people who very kindly bring our groceries out to the car in no time!
Sunday was rainy, and not just a light spring drizzle, but a pretty intense downpour. So, we spent the afternoon at the bookstore. Then, we finally got to see the movie I’ve been waiting what seems like a life time to see, the new Beauty and the Beast! We’d tried to see it opening weekend, probably not such a great idea, ha, but of course the tickets were already sold out. We finally got to see it and I honestly took delight in every moment! The casting was perfect and the entire film was a visual delight. The boys enjoyed it too. (They aren’t always thrilled about sitting still for 2 hours at a time.) But everyone was happy we’d gone and talking about the movie after. A film that encourages stimulating conversation afterwards is always a winner in my book!
Well, it was a wonderful weekend and now it’s back to the regular Monday routine. I’ve been spending Monday mornings recently experimenting with new recipes, as well as some old favorites. I’ve mostly been working on oatmeals, salads, soups, and treats. Last week, we made some granola that the boys have really enjoyed in the past and they asked for it again this week! That’s what I spent this beautiful Monday morning working on, more glorious granola! I made enough to freeze for later too!
I adapted this recipe from the Oh She Glows Every Day cookbook, one of our go-tos, according to what we keep on hand and personal preferences. Here’s our recipe and what you’ll need if you want to try it out. If your a granola fan, I promise you won’t regret it! A side benefit of making this delicious granola is that baking it envelopes your entire home in vanilla coconut yumminess!

Vanilla Coconut Granola:
-2 cups rolled oats
-1/2 cup pumpkin seeds
-1/2 cup sunflower seeds
-1 cup unsweetened coconut flakes
-2 tbsp coconut sugar
-1 tsp cinnamon
-1/2 tsp sea salt
-1/4 cup coconut oil
-1/3 cup pure maple syrup
-2 tbsp almond butter
-1 tsp pure vanilla extract
-Preheat the over to 300°F.
-First, combine the rolled oats, seeds, coconut flakes, coconut sugar, cinnamon, and sea salt in a mixing bowl. Stir gently to mix.
-Then, melt the coconut oil in a small saucepan on medium/low heat. Remove the coconut oil from heat after it’s liquified.
-Next, combine the maple syrup, almond butter, and vanilla in a separate bowl.
-Slowly pour this mixture into your melted coconut oil and gently whisk.
-Pour the liquid mixture over your dry ingredients. Gently stir until the dry mixture is completely coated.
-Place you mixture on a prepared baking sheet, preferably one with an edge, and spread evenly. Finally, bake for 15 minutes. Remove from oven to stir. Then, bake for an additional 8-12 minutes.
And there you have it, the best smelling and most deliciously mouth-watering vanilla coconut granola in the world! And like I said, double the recipes and freeze some for later, because you will want more for later!
